Cinnamon Cream Syrup

2 cups white sugar
1 cup karo syrup
1/2 cup water
1 teaspoon cinnamon
1 cup evaporated milk
In a saucepan, combine sugar, karo syrup, water and cinnamon. Bring to a boil. Boil 3 mins more and cool 5 mins. Stir in evaporated milk.
Wonderful change, from maple syrup, for french toast.
*You can reheat in microwave or stovetop, but be careful because it will boil over very easily.

Pumpkin Chocolate Cookies

Cream altogether:
2 cubes softened margarine
3 cups white sugar
2 eggs
1 lg. can pure pumpkin
2 teaspoons vanilla
Mix, then add:
5 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons of each; cinnamon, nutmeg, cloves
Mix altogether, then add 1 whole bag milk chocolate chips
Drop by spoonfuls on greased baking sheet. Bake @ 400 for 10-12 minutes, depending on your oven. Enjoy!!!

Brown Sugar-Rubbed Chicken

4 boneless & skinless chicken breasts
2 T. Brown Sugar
1 T. Paprika
2 t. Onion Powder
1 1/2 t. salt
1 t. Chili Powder

-Combine sugar & spices in a plastic zip lock bag.  Place chicken breasts in and shake so the mixture covers them.  Bake at 375 degrees for 1 hour.  Cover for 45 minutes and last 15 take off cover.

Black Bean Dip

2-15 oz cans of black beans (rinse & drained)
2-11 oz cans of white shoepeg corn (drained)
1-10 oz can of Rotel Mild Diced tomatoes & Green Chilies
1-10 oz can of Rotel Mexican Lime & Cilantro
1 full bunch of green onions washed and sliced
1 Tbs of olive oil
1 fresh lemon squeezed (or 1 Tbs of lemon juice)
Lemon pepper to taste
**Optional, cilantro and avocados
